It all started with ripe, organic grapes of the famous greek wine variety "Agiorgitiko" vini- fied according to the typical red wine making process. During the vinification the temperature is systematically measured and no sulfites or other additives are used at any point. This way a wine with intense aromas of fruit and spices, with a distinctive ruby red color is produced. Then the acidification beggins with controlled oxygen flow. When the vinegar is ready, the final touch is given with whole cardamoms and a mixture of peppers, green, red and white, deeped in itfor a short period. The result is a vinegar with complex aromatic bouquet and spicy taste, ideal for marinating red meat. Agiorgitiko vines are cultivated exclusively within the limits of the Nemea region where the NEMEA PDO wine is produced.

Hand picked grapes of the famous Greek, red wine variety "agiorgitiko". Average yield per acre: 600 to 800 kilos with a sugar content of 23-24 Brix.
Ingredients: Red grape vinegar, extract of cardamom & 3 peppers.

"Sofia tis Fysis" or "Wisdom of nature" was established in 2005 in order to make the best out of 8 hectares of organic farming vineyards in the Nemea region. In 2006, with Community initiative "LEADER+" funding, their production-bottling unit was completed in Koutsi.
From the beginning, we decided to use the well known red wine grapes variety "agiorgitiko" as first material for alternative products.
All their products are organic, without preservatives or additives and production unit runs according to the quality assurance systems ISO 9001:2000 and ΙSO 22000.
The products are certified by the inspection body for organic products DIO.
