• 1 cup Fine semolina
  • 1/2 cup Coarse semolina
  • 1 cup All Purpose Flour
  • 1 cup Sugar
  • 1 cup Unsalted margarine melted
  • 1 cup Greek Yogurt
  • 6 Eggs
  • 1/2 tbsp Lemon Zest
  • 2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • To make the syrup:
  • 5 cup Sugar
  • 5 cup Water
  • 1/2 medium Lemon peel
  • To garnish:
  • Cinnamon Stick
  • Cinnamon
  • We also need:
  • Margarine (unsalted) for brushing
  • Flour for dusting


Put into the mixer’s bowl the eggs, sugar and beat, until the sugar has melted. Then we add the yogurt and mix to combine.

Remove the bowl from the mixer, add the margarine, flour mixture, lemon zest and softly mix with a spatula, to combine. We remove the bowl from the mixer, in order to stir more gently, from bottom up, for the batter to remain airy.

Pour the batter into the prepared pan and spread it evenly.

We bake in the preheated oven for about 40-45 minutes.

Then we remove the pan from the oven and prepare the syrup: Put all the ingredients for the syrup into a saucepan and boil for about 10 minutes, until a syrup has formed. Remove saucepan from the heat and then take out the lemon peel.

Using a ladle, pour the syrup over the pan and leave the cake to absorb and cool.

Cut into pieces, sprinkle with cinnamon and serve the “Ravani” garnished with cinnamon sticks.
