Greek scrambled eggs with cheese and tomato (Strapatsada )

Strapatsada is a very popular recipe in Greece and it can be served as a meze, main dish or breakfast.

Ingredients

6 eggs

4 tablespoons milk

2 tablespoons olive oil

200g (7 oz) tinned chopped tomatoes

1 pinch sugar

1 pinch salt

1 pinch black pepper

150g (5 oz) feta cheese, crumbled

Directions

Beat the eggs gently and add the milk. Heat the oil in a pan and place the chopped tomatoes with the pinch of sugar. Cook at moderate temperature for 10 minutes or until there is no liquid left. Sprinkle with salt and pepper and pour the eggs in.

Stir the ingredients together in constant motion. When curds start to form, add the cheese.

The curds should be soft and the end product creamy.
