Greek jam tart (Pasta flora)


250g plain flour
100g caster sugar
225g unsalted butter
1 teaspoon vanilla extract
1 egg yolk
juice of 1/2 a lemon
300g jam of your choice


Combine the flour and sugar. Rub in the butter. Add the vanilla, egg yolk and lemon juice. Work together into a ball, adding 1 tablespoon of water to combine (only if necessary). Allow the pastry to rest for 20 minutes. Meanwhile, preheat the oven to 180 C / Gas 4.
Press half of the pastry into the bottom of a 20cm square baking tin. Spread the jam over the top of the pastry. Take the remaining pastry and roll pieces into ropes. Take the ropes to make a lattice pattern on top of the jam.
Bake in the preheated oven for 30 minutes, or until pastry is golden. Allow to cool before cutting and serving.

Pasta flora is a well loved Greek tart, made with whatever jam you want.
