Fava

Fava is made with yellow split peas (or yellow daal), and pureed to create an appetizer or meze that goes exceptionally well with salty dishes and fish, as well as meze, or a side dish.

Ingredients

500g yellow split peas

2 onions sliced

Salt, pepper

For the serving: extra virgin oil, lemon, onion sliced, capers

Directions

Soak the black-eyed beans overnight in plenty of water. Wash the beans thoroughly then boil them until they're tender and cook them about 30 minutes.

In a large bowl put all the ingredients and then add the black eyed beans. Mix everything together. Stir in the extra virgin olive oil and garnish with paprika.

Serve either warm or cold.

Green Split Peas

Split peas are high in protein and fiber and low in fat, containing only one gram of fat per 350 calories (1,500 kJ) serving. Either color can be used to make split pea soup. Split peas take 30 to 45 minutes to cook. In Europe, the Greek “Fava” is a dish made with yellow split peas pureed to create an appetizer or meze.
