Chicken Santorini

1 2-lb. frying chicken

3 Tbs. butter

3 Tbs. olive oil

1 lg. onion, diced

1 green pepper, diced

2 garlic cloves, minced

1 celery rib, finely chopped

1/2 C. white wine

1 8-oz. can tomato sauce

1/2 C. grated cheese





Clean chicken and cut into pieces. Wash well with cold running water, drain and pat dry. Heat butter and oil in 6-qt. pot. Add onion, green pepper, garlic and celery, and cook until soft. Add chicken pieces and cook until brown on all sides.

Combine wine, tomato sauce, cheese, salt, pepper and 1/2 water in bowl and mix well. Pour over chicken. Cover pot and simmer for 40 minutes or until chicken is done. Serve with white rice or pasta.
