Black eyed beans salad

This salad goes great with barbeque.


250g black eyed beans

Fresh parsley chopped

5 red peppers sliced

2 fresh onions sliced

5 tablespoons extra virgin olive oil

2 tablespoons vinegar

1 tablespoon honey

1 tablespoon mustard

1 small spoon carry


Soak the black-eyed beans overnight in plenty of water. Wash the beans thoroughly then boil them until they're tender and cook them about 30 minutes.

In a large bowl put all the ingredients and then add the black eyed beans. Mix everything together. Stir in the extra virgin olive oil and garnish with paprika.

Serve either warm or cold.

Black-Eyed Peas
